Best Pancake Recipes

Back near the beginning of this "Pancake Week," which has somehow stretched into nearly two, I gave you my best yogurt pancake recipe. Today I would like to direct you to some other "best" recipes. Here are some sites to start with:

I'm loving your series of pancake posts, Clair! Thank you for your dedication to your faithful readers.

My contribution is apple pancakes. Unfortunately, I'm not very good at following directions so instead of having an actual formal recipe, I just add some grated tart apple (including peels), lemon juice, grated lemon peel and cinnamon to whichever buttermilk pancake recipe I come across and cook in a frying pan as usual. (But first... if recipe calls for white sugar, I substitute light brown sugar; and if recipe calls for oil, I substitute melted sweet butter.)

On a successful-recipe-scale of 1 to 10, it's no wonder half the things I cook tend to rate a nice solid dependable 3. Recipes exist for a reason!!! That's why I really appreciate having all of these delicious tried-and-true pancake recipes all in one place. Thanks again, Clair.
